Čaro rómskej kuchyne
Prečo som sa rozhodol predstaviť rómsku kuchyňu?
Jedlo je kultúrne najvýznamnejším zdieľaným prvkom. Pri jedle netreba slová, stačia vôňa a chuť, ktoré často búrajú aj väčšie kultúrne bariéry, ako sú tie medzi Rómami a nerómskym, majoritným obyvateľstvom. Pri príprave tejto kuchárskej knihy som sa stretol so zvláštnym stereotypom. Keď som sa pýtal ľudí, ktorí rómsku kuchyňu nepoznajú, čo si pod ňou predstavujú, dostal som aj odpoveď: štvornohých domácich miláčikov.
Prelistoval som 2310 strán rómskych kuchárskych kníh, prečítal 1458 receptov z celej Európy, ale nenašiel som ani jeden taký recept. Pritom desiatky z nich sú pre súčasnosť neobvyklé, napríklad jedlá z ježkov. Poznáme iné národy, kde konzumácia spoločenských zvierat (psov, morčiat, korytnačiek, delfínov...) je bežnou súčasťou ich kultúr. Vieme, že Rómovia považujú niektoré ďalšie zvieratá za nečisté. Zmieňuje sa o tom aj Carol Wilsonová vo svojej knihe Recepty a kulinárske tradície Rómov píše, že psy, rovnako ako napríklad aj mačky, Rómovia pokladali za nečisté v obradnom zmysle slova, za zakázané. Aj z tohto dôvodu môžem tvrdiť, že konzumácia psov je spoločenský predsudok, bulvárny mediálny obraz postavený na mýtoch a stereotypoch. Nie je to každodenná realita ani kultúrna tradícia.
Keď odložíme predsudky, aká je v skutočnosti rómska kuchyňa?
Ako sa sami presvedčíte, rómske recepty sú inšpiratívne, rozmanité, vytvorené generáciami talentovaných rómskych kuchárok a kuchárov. Keď sa pýtam tých, ktorí už rómsku kuchyňu ochutnali, čo na ňu hovoria, asi aj preto dostávam odpoveď: „Bolo to výborné!“. Dokonca dodajú: „...nič lepšie sme ešte nejedli.“ Obe skupiny opýtaných, ako sami priznávajú, sa v niečom zhodujú. Rómsku kuchyňu dobre nepoznajú. Je pre nich neznáma až tajomná.
Aj z tohto dôvodu som vybral vzorku 52 receptov - na každý týždeň roka jeden. Čerpal som z vyše 20 rómskych kuchárskych kníh, z internetu, pridal som aj vlastné a recepty od mojich priateľov. Väčšina je zo Slovenska a Česka, ale aj z ďalších krajín: z Rumunska, Bulharska, Poľska, Maďarska, Veľkej Británie, Francúzska, Španielska, Talianska, Chorvátska a Indie. Niektoré sú špecifické pre daný región, iné sa opakujú takmer po celej Európe. Jedlá spojené s prírodou, jednoduché, ale aj pestré, zabudnuté aj súčasné, klasické aj veľmi originálne. Bol by som veľmi rád, keby táto kniha pomohla zmeniť stereotypný pohľad na rómske stravovanie.
Poďme spoločne zbúrať predsudky a znovuobjaviť čaro rómskej kuchyne. Lačho chaben, dobrú chuť.
