Zajímají Vás masné výrobky vyráběné opravdu především z masa? Chcete si je doma vyrobit? Vraťte se ke kořenům našeho uzenářského umění. Kniha obsahuje 768 masných výrobků, vyráběných v letech 1952–1993, zahrnuje tedy celé období poválečného československého masného a konzervárenského průmyslu. V 1. a 2. vydání bylo uvedeno 671 výrobků, kniha měla 752 stran. Masné výrobky jsou v knize uspořádány do skupin podle Vyhlášky č. 69/2016 Sb., zachoval jsem ale i rozdělení do podskupin podle zažitých uzenářských zvyklostí, byť je stávající legislativa již nerozlišuje. U každého výrobku je uvedeno číslo původní normy – ČSN, ON, PN MP atd. V každé receptuře je napsáno dávkování základních surovin a přísad, potřebných pro vyrobení 100 kg hotového vychlazeného masného výrobku. Hmotnosti surovin a přísad jsou uváděny v kilogramech, ostatní použité jednotky (metry, kusy, litry) jsou konkrétně označeny. Pokud u základních surovin není předepsán žádný způsob jejich úpravy před mícháním díla, zpracovává se čerstvé vychlazené maso. Ostatní doporučené úpravy surovin – předsolení, spaření, ztužení, vaření, nasolení, zmrazení apod. – jsou zmíněny v receptuře. Koření se do díla přidává obvykle mleté. Použití celého či drceného koření je v recepturách zdůrazněno. Technologické postupy se drží klasických metod výroby masných výrobků, jejich formulace předpokládají alespoň základní znalosti uzenářské terminologie, předúpravy surovin, míchání díla, jeho plnění do obalů a tepelného opracování masných výrobků. Pro amatérské uzenáře a experimentátory jsem doplnil stručný úvod do masné výroby. Pokud si nevíte rady s výpočty navážek pro zamýšlené množství výrobků, nalistujte kapitolu „Přepočty receptur“.
